Easy to make and another wee stay at home baking classic, Wee Buns Cookery School’s Fairy Cakes recipe is one that the whole family will enjoy making.

Fairy Cakes are smaller than cupcakes and are iced rather than topped with buttercream.

This Fairy Cake recipe has a Glaće Icing that you can add food colouring to for an extra pop of colour.

For a final flourish, sprinkle liberally with some fairy cake magic!

Fairy Cakes Recipe

Ingredients
125g self raising flour ( or 125g plain flour and ½ teaspoon baking powder)

125g soft butter (must be very soft)

125g caster sugar

2 eggs medium or large

1 tsp vanilla extract (or paste)

2 x 12 bun tins and bun papers

Makes approximately 24 buns

Glaće Icing

200g Icing sugar sifted

Hot water from a boiled kettle

Food colouring (optional)

How to Make Fairy Cakes

  1. Preheat oven to 180C or 160C fan
  2. Sieve the flour into a large bowl, add the sugar, butter, eggs and vanilla.
  3. Then using an electric hand whisk, whisk to combine well.
  4. The mixture should be soft enough to fall easily off the spoon. (Do not over mix)
  5. Spoon into bun cases, no more than half fill and cook for approximately 10 – 15 minutes until light golden.
  6. Cool on a wire rack and ice.

Glaće Icing

  1. 200g Icing sugar sifted
  2. Hot water from a boiled kettle
  3. Food colouring (optional)
  4. Sieve the sugar into a small bowl and add a little of the hot water at a time and using a spoon mix until smooth and the right consistency, it should have the consistency of double cream.
  5. Add a little food colouring if required.
